- 1 tbsp Shahi Jeera
- 1 tbsp Cumin Seeds
- 6 pieces of mace
Powdered Spices
- 1 tsp turmeric powder
- 1 tsp ginger powder
- 3 tsp garlic powder
Method
Dry roast whole spices on a low flame in a skillet. Allow the roasted spices to cool and then grind them in a spice grinder. Add the ground spices to powdered spices and then store this spice blend in an airtight jar. Use this aromatic biryani masala to make delicious biryani at home.

Add fried chicken, a cup of water with dried lemon, cloves, cardamom, cinnamon sticks, turmeric, chopped tomatoes, potatoes, biryani masala, and half of the caramelized onion back to the cooking pot and let it cook for 10 minutes or until the chicken is tender, draining the excess water.
Boil the rice until they are 75% cooked and then start assembling biryani layers in a baking tray, adding rice on the bottom, potatoes, and cooked chicken over the rice, followed by another layer of rice followed by gravy and another layer of rice topped with caramelized onion. Cover with Aluminium foil and bake at 350 degrees F for 15 minutes.

For Biryani
- Marinated chicken
- Caramelized onions
- 3 cups rice
- Dried lemon
- 2 cloves
- Cinnamon sticks
- 2 cardamoms
- 1/4 tsp turmeric
- 1 large tomato (chopped)
- 1 tbsp biryani masala
- 2 potatoes
For marinating chicken
- 2 lb. chicken (bone-in)
- ½ cup cilantro
- 6 garlic cloves (minced)
- 1-inch ginger (grated)
- 1 tsp salt
- 1 cup yogurt
- 3tbsp avocado oil
- 2 tbsp biryani masala
For caramelized onions
- 1 ½ onion
- 3 tbsp avocado oil
Instructions
- Take a bowl and add chicken pieces. Add cilantro, garlic and ginger paste, yogurt, and avocado oil—season chicken with salt and biryani masala.
- Wash and soak 3 cups of rice.
- Take a cooking pot and heat avocado oil over medium heat. Add onions and let them fry until turning brown. Take them out on a plate. Set aside.
- Now fry the marinated chicken in the remaining oil in batches until it gets a nice golden color.
- Then add dried lemon, cloves, cardamom, cinnamon sticks, turmeric, and chopped tomato. Add half of the caramelized onion (keep the remaining for garnishing biryani later).
- Add biryani masala, potatoes, and one cup of water and cook for 10 minutes or until the chicken is tender and there is no excess water.
- Boil rice until they are 75% done.
- Now start assembling the biryani. Layer the rice on the baking tray. Add cooked chicken and potato. Add another layer of rice. Then add masala and top it with another layer of rice—spread caramelized onions over the top.
- Cover the tray with aluminum foil and let it bake in the preheated oven at 350 F for 15 minutes. Enjoy!
