Ingredients

For Tacos

  • 2 lbs. Beef Chuck roast
  • 2 tbsp. Avocado Oil
  • 1 large onion (diced)
  • cilantro
  • Tortilla
  • Mexican cheese

For the sauce mixture

  • 6 garlic cloves
  • Inch of ginger
  • ½ cup tomato sauce
  • 2/3 cup chili paste
  • 3 cups chicken broth
  • 4 bay leaves
  • 1 tbsp cumin
  • 2 tsp Mexican oregano
  • 7 cloves
  • One stick cinnamon
  • 1 tbsp coriander
  • 1 tbsp salt
  • 1 tsp thyme
  • 1 tbsp black pepper
  • 2 cups water
  • 2 tbsp vinegar

Instructions

  1. Blend all sauce ingredients with two cups of water and 2 tbsp vinegar. Set aside
  2. Brown Chuk roast in oil over medium heat. Transfer to a plate.
  3. Sauté diced onion in the remaining oil until translucent for 2-3 minutes.
  4. Stir in the sauce mixture and the browned beef.
  5. Cook the meat for 2-3 hours or until tender. Shred the meat with a fork.
