- 2 lbs. Beef Chuck roast
- 2 tbsp. Avocado Oil
- 1 large onion (diced)

For the sauce mixture
- 6 garlic cloves
- Inch of ginger
- ½ cup tomato sauce
- 2/3 cup chili paste
- 3 cups chicken broth
- 4 bay leaves
- 1 tbsp cumin
- 2 tsp Mexican oregano
- 7 cloves
- One stick cinnamon
- 1 tbsp coriander
- 1 tbsp salt
- 1 tsp thyme
- 1 tbsp black pepper
- 2 cups water
- 2 tbsp vinegar
Instructions
- Blend all sauce ingredients with two cups of water and 2 tbsp vinegar. Set aside
- Brown Chuk roast in oil over medium heat. Transfer to a plate.
- Sauté diced onion in the remaining oil until translucent for 2-3 minutes.
