Ingredients

For lentil soup

  • 1 ½ cups red lentils
  • 7-8 cups of water
  • 2 tbsp avocado oil
  • 1 large onion
  • 1 celery
  • 1 pepper
  • 5 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 ½ tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • Salt & pepper (to taste)

To top the soup

  • 2 tbsp Butter
  • Garlic cloves
  • ½ tsp red pepper
  • ½ tsp red paprika

Instructions

    1. Rinse lentils under running water to remove impurities.
    2. Heat 2 tbsp avocado oil in a large pot over medium heat. Add onion, and sauté until soft and fragrant.
    3. Add chopped carrot, celery, and red pepper.
    4. Add tomato paste and let it cook for a few minutes. Then add spices (cumin, paprika, coriander, salt, and pepper) and lentils.
    5. Stir in water, cover the pot, and simmer on medium heat for about 25 minutes or until cooked.
    6. Remove the cover and adjust the seasonings.
    7. Blend the cooked lentil mixture using an immersion blender until smooth and creamy. 
    8. To finish the soup, add butter in a skillet, add chopped garlic, and seasoning (paprika & chili flakes). Add to the soup for a spicy kick with buttery notes.
