What are Honeycomb Cinnamon Bites?

Honeycomb cinnamon bites are a home cook’s answer to a classic cinnamon roll but in a miniature. The original honeycomb cinnamon bites recipe calls for cinnamon buns to be broken into small bite-sized pieces stuffed with cream cheese, glazed with cinnamon, brown sugar, and salted butter mixture, and baked to perfection. Finish it off with cream cheese, butter, and vanilla icing.

When you bite into these delectable cinnamon treats, the inner layers of dough are soft and sweet, like a classic cinnamon roll. Still, the edges are extra crispy and cinnamon-y, thanks to the cinnamon-sugar syrup glaze.

What You’ll need to make Honeycomb Cinnamon Bites

Milk – Warm whole milk yields the best results in terms of texture and consistency for these honeycomb bites recipes. However, you can use low-fat milk if you prefer.

Yeast – Instant yeast or active dry yeast works well for this recipe.

Cinnamon – I recommend using fresh cinnamon whenever possible. I used a relatively high cinnamon-to-sugar ratio to get the most out of each bite.

Sugar – Brown sugar imparts a yummy sweetness in this bite recipe.

Butter – Butter bakery-style goodness to these honeycomb bites. Be sure to use softened butter that is not too melty; otherwise, it may leak out of the filling before baking.

Flour – All-purpose flour is the way to go.

Make Ahead Instructions:

If you wish to make these honeycomb bites ahead of time to have them for breakfast the following day, it is possible to do so. Prepare the dough the night before and let it sit in the fridge in the baking pan wrapped with a plastic sheet. Next day, you’ll need to take it out from the refrigerator and leave it on the countertop to allow the dough to come to room temperature while you heat your oven. Bake as instructed in the recipe and pour the freshly prepared icing.

Storage and Reheat:

When it comes to cinnamon bites, it’s best to eat them warm and fresh, straight from the oven; however, if you have leftovers, you can keep them on your countertop stored in tightly sealed container for up to 3 days.

It’s extremely simple to warm up the cinnamon bite balls in the microwave for 15-20 seconds or until they are warm enough to consume.

Honeycomb Cinnamon Bites FAQs

How to tell if my honeycomb cinnamon bites are done?

Cinnamon bites came out of the oven very soft and fluffy, but if you wait a few minutes, they’ll be crispy and brown, with a gooey soft marshmallow inside. Instant-read thermometers are the easiest way to determine if they’re cooked perfectly. 190°F is the recommended temperature, so if it reads that, you’re good to go! Insert it directly into the middle.

Can I use bread flour to make these honeycomb bites?

You can certainly do that. Bread flour gives these cinnamon bites a soft and fluffy texture while giving them a slight chew. Unlike regular all-purpose flour, bread flour contains more protein – creating a smoother, chewier dough.

  1. Your numbers don’t add up you say mix the 4 cups of flour then after rising it says use the extra cup of flour. Also says 1 cup of butter in ingredients but instructions say 1/2 cup. Kind of confusing

    1. yes you mix four cups with the dough before it raises then the other cup with the baking powder after it has tripled in size so it would be easier to rollout and cut. For the butter you put 1/2 cup for the dough and 1/2 for the cinnamon mixture.
