  • 2 lb. skirt steak
  • 1/3 cup Mexican blend cheese
  • ½ cup Pico de Gallo
  • Sauce
  • Tortilla

For Steak Marinade

  • 6 cloves garlic
  • Salt & pepper
  • 1/2 tsp oregano and cumin
  • 1/4 tsp chili flakes
  • A bunch of cilantro
  • 1/3 cup soy sauce
  • Juice of 2 limes

For Sauce

  • 1 cup sour cream
  • Cilantro (about half a bunch)
  • Salt & pepper
  • Juice of 3 limes
  • 1 clove garlic (grated)
  • 1 avocado
  • 4-6 chipotle peppers (less if you can’t handle spicy)

For Pico

  • 2 tomatoes
  • ½ red onion
  • one jalapeño seeded
  • a bunch of cilantro
  • juice of two limes
  • grated garlic
  • 1/4 teaspoon cumin
  • salt and pepper (to taste)
