How to make Stuffed Pasta

These stuffed pasta shells are filled with a mixture of ricotta and a blend of cheeses and then covered with marinara sauce and baked.

Make Marinara Sauce & Ground beef

Heat two to three tablespoons of avocado oil on a frying pan and add chopped onions, diced peppers and ground beef.  

Cook until beef browned.

Season it with salt and pepper, all-purpose seasoning, Italian seasoning, and add chopped garlic, while stirring occasionally. Stir in marinara sauce and let it cook until meat is tender.

Cook the Pasta

Prepare pasta according to package instructions and add 1 cup of leftover pasta water to the pre-made marinara sauce to add savory flavors of pasta in the sauce. Divide the sauce in half after adding pasta water. After draining the pasta shells in a colander, rinse in cold water to avoid sticking.

Make the Cheese Filling

To make the cheese filling for the pasta, combine ricotta, egg, Italian seasoning, garlic powder, salt and pepper, chopped parsley, parmesan cheese, and mozzarella cheese, and mix until smooth and creamy. Place the filling in a piping bag for stuffing pasta shells in a convenient way.

Stuff each pasta shell with the ricotta and cheese mixture

Layer the cheese stuffed shell over ground beef and marinara sauce mixture.

Ingredients

For marinara sauce and ground beef mixture

  • 2 tbsp avocado oil
  • 1 small onion
  • 1 cup chopped peppers
  • 1 lb. ground beef
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp Italian seasoning
  • ½ tbsp all-purpose seasoning
  • 6 garlic cloves (minced)
  • 30 oz. marinara sauce

For pasta filling

  • 12 oz. shell pasta
  • 30 oz. ricotta
  • 1 egg
  • ½ tsp garlic powder
  • ½ cup chopped parsley
  • 1 cup parmesan cheese
  • 1 cup mozzarella cheese

Instructions

    1. Heat 2 tablespoons of avocado oil in a pan and add chopped onion, diced peppers, ground beef, chili powder, salt and pepper, Italian seasoning, all-purpose seasoning, garlic cloves, and marinara sauce.
    2. Cook shell pasta according to package instructions.
    3. After cooking the pasta, add ½ cup of pasta water to the sauce mixture and divide the sauce into two equal parts.
    4. To make pasta filling add ricotta, egg, Italian seasoning, garlic powder, salt, pepper, chopped parsley, parmesan cheese, and mozzarella cheese, and mix the stuffing well until smooth.
    5. Once the pasta stuffing is ready, place it in a piping bag for easy assembly.
      Fill the pasta shells with stuffing.
    6. Place stuffed pasta shells in the pan over the beef and sauce mixture.
    7. Top the pasta shells with the remaining sauce mixture, cheese, and parsley.
    8. Finally, bake at 350-degree F for 25-30 min.
