Ingredients

  • 1 lb. ground beef
  • 1 large red onion
  • 2 red peppers
  • 3 tbsp oil
  • 1 tbsp. chili powder
  • 6 cloves garlic
  • 1 jalapeno seeded
  • 1 tbsp. Cumin
  • 1 tbsp. oregano
  • 2tsp smoked paprika
  • 1 tbsp soy sauce
  • 1 tsp black pepper
  • ½ tbsp salt (or to taste)
  • 1 can (6oz.) Tomato paste
  • 1 can Fire Roasted diced tomatoes
  • 3 cups beef broth
  • 1 can (15 oz.) black beans (drained)
  • 1 can (15 oz.) kidney beans (drained)

Instructions

  1. Heat oil in a cooking pot over medium heat. Add onion and red
    pepper and let them simmer until translucent for 2-3 minutes.
  2. Add ground beef, brown it, and then garlic and jalapeno, and
    season it with cumin, oregano, smoked paprika, chili powder, soy sauce, and
    salt and pepper.
  3. Let the ground beef simmer for 2 minutes. Then stir in tomato
    paste and roasted diced tomatoes.
  4. Let it cook for 5-10 minutes to get the harsh tomato taste
    out.
  5. Then add the beef broth and drained black beans, and kidney
    beans. Bring to a boil stirring continuously.
  6. Reduce heat to medium-low, cover the pot and let it cook, and
    let simmer for about 20 minutes stirring occasionally to avoid sticking to the
    bottom.
  7. Top with sour cream and sprinkle cheese over it.  
  8. Garnish with green onions, red pepper, lemon wedges, or anything
    you like.
  9. Serve with avocados, rice, cornbread, or crackers. Enjoy!
