- 1 lb. ground beef
- 1 large red onion
- 2 red peppers
- 3 tbsp oil
- 1 tbsp. chili powder
- 6 cloves garlic
- 1 jalapeno seeded
- 1 tbsp. Cumin
- 1 tbsp. oregano
- 2tsp smoked paprika
- 1 tbsp soy sauce
- 1 tsp black pepper
- ½ tbsp salt (or to taste)
- 1 can (6oz.) Tomato paste
- 1 can Fire Roasted diced tomatoes
- 3 cups beef broth
- 1 can (15 oz.) black beans (drained)
- 1 can (15 oz.) kidney beans (drained)
Instructions
- Heat oil in a cooking pot over medium heat. Add onion and red
pepper and let them simmer until translucent for 2-3 minutes. - Add ground beef, brown it, and then garlic and jalapeno, and
season it with cumin, oregano, smoked paprika, chili powder, soy sauce, and
salt and pepper. - Let the ground beef simmer for 2 minutes. Then stir in tomato
paste and roasted diced tomatoes. - Let it cook for 5-10 minutes to get the harsh tomato taste
out. - Then add the beef broth and drained black beans, and kidney
beans. Bring to a boil stirring continuously. - Reduce heat to medium-low, cover the pot and let it cook, and
let simmer for about 20 minutes stirring occasionally to avoid sticking to the
bottom. - Top with sour cream and sprinkle cheese over it.
- Garnish with green onions, red pepper, lemon wedges, or anything
