What is chicken Fettuccine Alfredo?

Chicken Fettuccine Alfredo is a classic Italian-American dish consisting of Fettuccine noodles tossed in a rich and creamy Alfredo sauce served with slices of tender and juicy chicken.

Alfredo sauce is a magical creation that can take a simple plate of pasta and elevate it to the next level of deliciousness. This rich and creamy sauce combines butter, heavy cream, and Parmesan cheese, creating a silky and smooth texture sauce. Fettuccine noodles tossed in creamy sauce and perfectly cooked chicken create the perfect balance of flavors and textures.

Chicken Alfredo Recipe Ingredients

The three main components of Chicken Alfredo Pasta are:

Fettuccine Noodles – Fettuccine noodles are long and flat pasta. The noodles are cooked in salted boiling water until tender, drained, and tossed with the Alfredo sauce.

Chicken – Use boneless and skinless chicken breasts seasoned with herbs and spices such as garlic powder, onion powder, salt, pepper, and oregano. The chicken is either pan-fried or grilled until cooked and then thinly sliced.

Alfredo Sauce – Alfredo sauce is a creamy, buttery sauce made with butter, heavy cream, garlic, and Parmesan cheese. The recipe may also use other ingredients, such as cream cheese, flour, and lemon juice. The sauce is cooked until it thickens and then poured over the pasta and chicken.

FAQ’s

How to store chicken alfredo?

To store leftover chicken Alfredo, transfer it to an airtight container and store it in the refrigerator for 3-4 days. It’s best to keep the chicken and noodles separately from the sauce to prevent them from becoming too soft and mushy.

To reheat, you can either microwave the chicken Alfredo in 30-second intervals, stirring in between until it’s heated through, or you can reheat it on the stove by adding a splash of milk or cream to the sauce to thin it out and gently reheat it over low heat.

If the sauce is too thick, add some milk or chicken broth to thin it out. Be sure to stir the sauce frequently while reheating to prevent it from scorching or sticking to the bottom of the pan.

Can I use a different pasta than Fettuccine?

Yes, you can use any pasta you prefer. However, remember that Fettuccine works best for this dish as its wide, flat shape holds the sauce well.

Can I use pre-cooked chicken?

Yes, you can use pre-cooked chicken if you have it on hand. Heat it up and add it to the sauce at the end.

Can I make the Alfredo sauce ahead of time?

While the sauce can be made ahead of time, it’s best to reheat it gently on the stovetop or in the microwave before tossing it with the pasta and chicken.

Can I freeze Chicken Alfredo?

The pasta can be frozen, but the sauce doesn’t freeze well due to the cream and cheese. The sauce can separate and become grainy when reheated, so making a fresh batch when you’re ready to enjoy the dish is best.

Can I add vegetables to the dish?

For added flavor and nutrition, you can add vegetables such as broccoli, peas, or mushrooms.

Is Chicken Alfredo a healthy dish?

While delicious, Chicken Alfredo is not considered a healthy dish due to its high calorie and fat content. It’s best enjoyed in moderation as a special treat.

Chicken Alfredo Recipe

Experience the tantalizing aroma of golden pan-fried seasoned chicken breasts, perfectly paired with al dente Fettuccine noodles, all tossed together in a rich and velvety garlic, butter, and parmesan cheese sauce.

Ingredients

For Chicken

  • 2lb chicken breast
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp basil
  • ¼ tsp oregano
  • Salt & pepper

For Pasta Sauce

  • 4 tbsp butter
  • 6 garlic cloves
  • 3 tbsp flour
  • Spice blend (same as chicken)
  • 1 ½ cups heavy cream
  • ½ cup pasta water
  • 4 oz cream cheese
  • 1 lemon juice
  • 10 oz pasta
  • 1 cup parmesan cheese

Instructions

To make Fettuccine Pasta

  1. Prepare the Fettuccine pasta according to the package instructions.
  2. Once cooked, reserve ½ cup of pasta water for alfredo sauce, drain, and set side.

To make the chicken

  1. Mix the chili powder, garlic powder, onion powder, basil, oregano, and salt & black pepper in a small bowl to make spice rub for chicken breasts.
  2. Season the chicken breasts with the spice mix and drizzle a tablespoon of avocado oil over the seasoned chicken.
  3. Heat the avocado oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for 5 minutes on both sides or until nicely browned and cooked through.
  4. Add butter and rosemary once the chicken is nicely browned.
  5. Remove from heat and set aside.

To make Alfredo Sauce

  1. Melt the butter in a pan over medium heat, add garlic cloves, flour, and chicken seasoning, stirring constantly, until fragrant, about 1-2 minutes.
  2. Pour in the heavy cream, followed by reserved pasta water, and whisk until well combined.
  3. Add in cream cheese and lemon juice, and stir well until smooth.
  4. Add the cooked Fettuccine pasta and parmesan cheese to the sauce and toss until well coated.

Assemble

  1. Slice the chicken breasts and place them on top of the pasta.
  2. Garnish with chopped fresh parsley and serve hot.

Notes

Avoid Pre-Grated Parmesan Cheese – The flavor of freshly grated parmesan cheese is much stronger than pre-shredded cheese, so it's worth the extra effort to grate it yourself.

Don't Overcook the Chicken – Chicken breasts can quickly become dry and tough if overcooked. Make sure to cook them until they're no longer pink in the middle, and remove them from the heat as soon as they're done.

Cook The Pasta Al Dente – Fettuccine noodles should be cooked until they're al dente, which means they're still slightly firm in the center. It helps the pasta hold up better when mixed with the sauce.

Reserve Some Pasta Water – Before draining the cooked pasta, keep a cup or so of the starchy pasta water for the sauce for a smooth and creamy sauce.

Serve Immediately – Chicken alfredo is best served immediately while it's still hot and creamy. If you need to reheat leftovers, heat leftovers over low heat, stirring frequently.
