The homemade creamy avocado lime sauce is made of jalapenos, avocado, lime juice, and sour cream. To round out this meal, I’ve included a fresh Middle Eastern salad that adds an exotic pop of color and bursting flavors of ripe tomatoes, crunchy onions and other fresh veggies.

How to make Loaded Chicken Rice Bowl

Start by preparing the tender, juicy chicken breasts by seasoning them in soy sauce, lemon juice, garlic cloves, cilantro, chilli, oregano, salt, and pepper. Cook the chicken in a hot skillet with olive oil until browned on both sides.

Add washed and soaked rice in a pan and pour boiling water, ensuring the water covers the rice.

Add oil and bay leaf and boil the rice on medium heat for 5 minutes. Cook the rice on low heat until all the water is absorbed. Take the rice off the heat and let them sit undisturbed for at least 10 minutes.

Fluff with the fork and enjoy.

For the homemade avocado cilantro lime sauce, puree an avocado, roasted jalapeños, garlic cloves, sour cream, lime juice and cilantro in a blender or food processor until smooth. Season with salt and pepper to taste.

To add a burst of freshness, prepare a Middle Eastern salad by tossing juicy diced tomatoes, seeded jalapeños, cilantro, lime juice, cumin, salt, and pepper together in a large bowl.

Finally, layer the chicken, rice, avocado lime sauce, and salad in a bowl, starting with the rice as the base.

Serve immediately and enjoy the perfect combination of tender chicken, fluffy rice, creamy avocado lime sauce, and fresh salad.
